It all started with an idea by Beppe Berti of fast, simple, economical but above all “genuine” catering, absolutely current needs and trends. After years of experience in classic catering and discussions with experts in the sector, the BIGOI project took shape where fresh egg pasta is the protagonist. A cross between a “pasta shop” and “typical Italian gastronomy”. A fusion of flavours, tradition and modernity, in a warm and welcoming environment, with typical Italian furnishings that highlight the genuineness of the product and the ingredients used.
The bigoi
“Bigoi” are a type of long pasta, of Venetian origin, similar to thick spaghetti. We prepare it with durum wheat semolina, water, eggs and salt. The main characteristic of this type of pasta is its roughness, which allows it to retain any type of sauce on the surface. The machine we use was created in collaboration with an Italian craftsman based on our project. The unique characteristics of this process, together with our recipe, allow the customer to have the same experience of eating homemade pasta. The pasta is produced in front of the customer, cooked on the spot or packaged for take-away. The customer who observes can thus personally test the authenticity of our artisanal product. All the ingredients used for BIGOI are produced by Italian companies of the highest certified quality.
